The lab exercises are designed to be "scaffolded" exercises. Each assignment introduces some new material, it may get a little harder, and it has less of the tutorial step-by-step instructions. "Jenga" may be a better metaphor than a scaffold.

You may find that you will be able create STELLA models just by looking at the diagram and the equations that are listed right under it.
