Many schools and universities have Vernier lab equipment, which inclues a range of sensors that have both digital and analog outputs. Vernier sells a small interface card that provides a plug-in for vernier sensors that can then be accessd by an Arduino. This considerably expands the sensors available to you without having to build much in the way oc a circuit.
Vernier is a local Oregon company; in addition to making equioment for science deucation, the company is very active in Supporting educational organizations and schools. It is worth visiting the Vernier web site to see their range of products. Vernier supports the connection of their sensors to Arduino-compatible boards. Their web site contains instructions and sample code to get you started.
